Beef Stroganoff with Greek Yogurt - Recipe Diaries (1)

Beef stroganoff is a childhood favorite dish of mine. My Dad would always make it for us. I don't really remember having too many favorite childhood dishes besides this one and Chicken Cheese Hotdish. He would always use ground beef and often times I see this recipe with cubed beef and mushrooms.

The only time I will ever eat mushrooms is when they're cut up into really tiny pieces like they are in condensed cream of mushroom soup. Otherwise, then this recipe, this will be the only time you see a recipe that includes mushrooms on this site. I've tried to like mushrooms before but we just don't get along. It's a texture thing. That and black olives.

  • Lean ground beef - Is considered better than higher fat options for several reasons. First, it has less saturated fat, which can contribute to heart disease and other health issues. Additionally, it tends to have fewer calories per serving, making it a good option for those watching their weight. The 96% lean ground beef from Aldi is my favorite.
  • Onion, chopped yellow or white
  • Cornstarch - Used to help thinking the gravy
  • Garlic powder - is made from dehydrated garlic cloves and like the chili powder above it gets pulverized into a powder or flour consistency.
  • Cream of mushroom soup (98% fat-free)
  • Uncookedegg noodles
  • Greek Yogurt or Light Sour Cream - is considered great for a variety of reasons. It is typically higher in protein and lower in sugar than regular yogurt, making it a good choice for those looking to maintain a balanced diet.

What to serve with beef stroganoff?

Beef stroganoff is a classic dish that is usually served with a side of egg noodles or rice. Some other popular options include roasted vegetables such as Smoked Asparagus or green beans, a fresh green salad, or Air Fryer Garlic Bread.

You can also try serving it with Dairy Free Mashed Potatoes or an Air Fryer Baked Potato for a heartier meal. If you're looking for something lighter, a side of steamed broccoli or roasted Brussels sprouts can be a great choice. Ultimately, the choice of side dish will depend on your personal preferences and the occasion.

FAQs

What can I add to my beef stroganoff to give it more flavor? ›

Typically I'd use fish sauce, soy sauce, and marmite (or a combination thereof), but as Worcestershire sauce (another umami powerhouse) is so common in Stroganoff recipes, I decided to add a splash of it here in place of the marmite.

What is the best substitute for sour cream in stroganoff? ›

Greek yogurt is a healthy alternative to the traditionally used sour cream in beef stroganoff recipes, so you can be confident that your family is getting a satisfying, healthy meal. Fresh dill and paprika will provide a sweet, slightly smoky garnish to top off the dish.

How do you add sour cream to stroganoff without curdling? ›

Keep Stroganoff Sauce from Curdling

Temper the sour cream by adding a few teaspoons of the hot liquid from the pan—one tablespoon at a time—before adding the sour cream to the pan. Turn the stovetop down to low before adding the sour cream and give it a few minutes for the temperature in the pan to actually lower.

What thickens stroganoff? ›

Cornstarch: Cornstarch is an ingredient that comes in handy if you want your sauce a little thicker. Sour cream: Full-fat sour cream is what we used, but feel free to substitute a lower-fat sour cream if you choose. However, some picky eaters will be able to tell the difference if you use a lower-fat sour cream!

How do you make stroganoff less bland? ›

I suggest using a very flavorful broth or else your stroganoff will end up being bland. We use Better Than Bouillon to make our beef broth. Worcestershire Sauce & Dijon Mustard: Worcestershire sauce and Dijon mustard are added to the broth to add more dimension to the flavor.

How do you deepen beef flavor? ›

  1. Add herbs and spices: Mix in dried herbs and spices such as cumin, chili powder, garlic powder, and onion powder to give your ground beef a bolder flavor.
  2. Use a marinade: Marinate the ground beef in a flavorful liquid such as Worcestershire sauce, soy sauce, or red wine before cooking.

Can you use Greek yogurt instead of sour cream? ›

Full-fat Greek yogurt will offer the closest approximation of sour cream's flavor and texture, and can be used as a one-to-one replacement for sour cream. If you'd like, you can stir some heavy cream into any percentage of Greek yogurt to give it a somewhat richer body and higher fat content.

Does Greek yogurt cook the same as sour cream? ›

The substitutions are based on equivalent water and milkfat content, which for most baking recipes are the more important components to match. They add up to slightly more than one cup due to yogurt's higher protein content vs. sour cream, but this should not negatively impact a baked good's outcome.

How much Greek yogurt do I substitute for sour cream? ›

In most cases, plain yogurt or Greek yogurt can be used in place of sour cream—and vice versa. Sour cream will give you a similar texture and tanginess, and swapping sour cream for yogurt is a simple 1-to-1 ratio.

Can I use yogurt instead of sour cream? ›

Yogurt is your best substitute for sour cream. Whether you're baking or making a dip or sauce, yogurt is a 1:1 sub. That means if your recipe calls for 1 cup of sour cream, you can replace it with 1 cup of yogurt. Full-fat Greek or natural yogurts work best, but low-fat or even nonfat can be used, too.

How do you make Greek yogurt taste like sour cream? ›

The addition of just a small amount of lemon juice stirred into your Greek yogurt will brighten up its flavor and make it more closely resemble that of a true sour cream.

How to make Greek yogurt similar to sour cream? ›

Alternatively, a pinch of baking soda can neutralize the acidity of the yogurt, making it taste more like sour cream. The key is to taste and adjust as you go, making sure the overall flavor of your dish remains balanced and delicious.

How do you stop cream curdling in beef stroganoff? ›

Temper the cream first. Add a liitle bit of tomato sauce at a time to the cream until it is warm and then add it all back into the tomato sauce. This will keep it from curdling.

Garlic, onion, black pepper, and salt are staple spices when flavoring beef. Garlic and onion are potent, pungent aromatics that play well against beef's deep, meaty umami.

How to add rich flavor to beef stew? ›

Add spices such as turmeric, coriander and cumin at the early stage of cooking, when you are frying onions and garlic, to enhance the taste of the beef stew. Fresh herbs like coriander and bay leaves also contribute a distinct flavour without making the dish too spicy for the younger members of the family.

What to add to Hamburger Helper stroganoff to make it taste better? ›

Be it cheesiness or something else. I'm not big on mushrooms and the like, so my usual goto of spicing it up is to add the meat, then garlic powder, onion powder, salt, pepper, pinch of paprika(sometimes none), small amount of cavenders, and occasionally, if Im in a sweet mood, brown sugar.

What ingredient and taste that you would add to enhance the flavor of a bland stew without adding more salt? ›

Things like cinnamon, turmeric, curry powders, fresh ground peppercorns, sage, tarragon and dill can all pick up where you left the salt out. Allow yourself some discovery. Without the added sodium, herbs and spices can offer a different depth of flavor especially if you grind them up yourself.
