How to Make French Onion Soup:

If you’re not familiar with French Onion Soup, it’s caramelized onions that are infused with thyme in a beef broth. The hot soup is topped with crusty bread and cheese then quickly broiled in the oven to get a melty gooey and bubbly top.

It’s basically heaven in a bowl.

I’ve quickened this recipe, while still leaving it full flavored and delicious.

What type of onions to use for French Onion Soup?

  • I prefer the yellow sweet onions as they tend to have a more mild sweet flavor to them.
  • Chop off the top and bottom of the onion, peel it, then cut it in half.
  • Make the onion slices uniformly thin so the onions can cook quicker and more evenly.

Throw the onions and some butter into a large pot along with some sprigs fresh thyme and a bay leaf. Let it cook, stirring occasionally until the onions are really soft and tender.

Once they are soft and tender add some red cooking wine and stir to break up any browned bits on the bottom of the pan.

Let the red wine reduce to half then sprinkle the onions with some flour and stir. This will help thicken the soup and give it some body.

Pour in the beef broth and you’re nearly done!

The trick to the French Onion Soup is to get the bread nice and crusty so it doesn’t immediately turn to mush when it’s placed on top of the soup. Well, I found that using a good and thick garlic crouton yields amazing results. For one, it’s easy (I always have croutons on hand), and for two, the croutons hold their shape quite well and have a little crunch to them even after being drenched in soup and smothered with cheese.

What type of cheese for French Onion Soup?

  • I use a nice thick cut Havarti cheese, but you can also use
  • Swiss
  • Gruyere
  • Gouda
  • The possibilities are endless, have fun with it!

Well, naturally, food cooks faster at a higher temperature, and the addition of water here reduces the risk of burning and better distributes all the sugars.

How do you fix bland onion soup? ›

Fix a bland onion soup by using supermarket broth and mild white onions, tasteless oil for sauteeing, stale plain white bread instead of croutons, and mild white cheese. Start by reducing the broth. Simmering out some water will intensify the flavor of the broth. Once you get it to the right point, add some salt.

Is French onion soup good for you? ›

Well, you'll be pleased to know that french onion soup is, in fact, a highly nutritious choice. Onions, as part of the Allium family, contain Quercetin which is a powerful anti-inflammatory and should not be overlooked as a vegetable when considering your daily 7-a-day.

Why is my French onion soup too sweet? ›

Onions are very sweet, especially when they're cooked down, and that is the main purpose of onion soup. The sweetness can be balanced by adding some dry wine or vinegar. Taste as you go and don't overdo it. A little salt will balance it too, but don't forget that the grated cheese you will top it with is salty.

Does it matter how you cut onions for French onion soup? ›

For French onion soup, it is best to slice the onions into thin, even slices. This will allow them to cook evenly and caramelize properly. You can achieve this by cutting the onion in half, placing the flat side down, and slicing it widthwise into thin slices.

What is the best wine to use in French onion soup? ›

Wine is optional to deglaze the pan and add flavour to the soup. I recommend a dry white or red wine, such as a good quality Pinot Grigio/Gris, Sauv Blanc, Sémillon, Chardonnay, Merlot or Pinot Noir. Generally, if you can't drink it, don't cook with it.

How do you make soup taste stronger? ›

How do you get the depth of flavor in vegetable soup? ›

A squeeze of citrus, a dollop of yogurt or a drizzle of cream, a dusting of cheese or a good chile powder, a sprinkling of some herbs or croutons — all can take a perfectly fine soup into the realm of the delectable. Even a spiral of good olive oil to finish and some coarse sea salt can do wonders.

Why do you add flour to French onion soup? ›

Onion soup, at its very essence, is nothing more than onions and water boiled together. Period, done, finished, everything added from that point on is pure opinion. Caramelizing the onions brings out sugars, and makes a more luxurious silky and sweet soup, adding flour gently thickens and provides body.
