Flavoring the Dough

Looking to take these cookies to the next level with some other flavors? Here are my favorites below.

  • Mint: Add mint extract to the dough in place of vanilla. Use a mint chocolate kiss or classic chocolate kiss in the center.
  • Peppermint: This one is delicious. Use peppermint extract and peppermint or chocolate kisses.
  • Cherry Almond: Use almond extract and a cherry kiss or chocolate cherry candy such as cherry cordials.

HERSHEY SNOWBALL COOKIE INGREDIENTS

■PECANS: Use a new bag of pecans if it’s the first of the season you are using them. Pecans go bad so be sure to taste them first before using. Finely chop them or ground them in the food processor. Do not substitute pecans for walnuts.

■BUTTER: I always stock up on good quality butter like Land of Lakes right around Thanksgiving when it’s on sale for the season. For the holidays, be sure to use real butter, not margarine.

■GOOD VANILLA EXTRACT: A good quality vanilla extract is best for these shortbread cookies. You’ll really be able to taste the vanilla, too so it’s best to use one you really like. I like to use this Mexican vanilla for all of my baking.

■CHOCOLATE KISSES: I like to use classic chocolate kisses. May use white chocolate, peppermint, mint, or other flavors.

■SUGAR: Both powdered sugar and granulated sugar give this cookie just the right amount of sweetness.

■FLOUR: Dough will be very thick once all the flour is added in to the batch. If it is very sticky, add a tablespoon more in at a time but for the most part, the dough should be thick and hold its structure.

FAQs

Why are my snowball cookies spreading? ›

If you found your cookies to spread too much in the oven, there are a host of things that can cause this. Your butter could be too warm. You may have improperly measured the flour or the sugar (use that scoop and level method!). You could have placed the dough balls on a sheet pan that was warm.

How long can you store snowball cookies? ›

How Long Do Pecan Snowball Cookies Last? Store cooled cookies in an airtight container at room temperature for up to five days. Freeze for up to three months for longer storage. Dust again before serving for the freshest presentation.

Why are my snowball cookies flat in the oven? ›

Why do my snowball cookies go flat? These snowball cookies should not flatten. If they do it's likely the dough wasn't chilled long enough and the ingredients were too warm to begin with so they spread. It's also possible you accidentally measured the ingredients incorrectly!

Why did my snowball cookies flatten in the oven? ›

Why did my snowball cookies flatten? The cookies will flatten slightly when baked, but they shouldn't flatten completely. If you skipped the chilling time, this may be why they spread. Another reason is if you place the dough on a hot baking sheet; if you have to reuse baking sheets, let them cool first.

Does freezing cookies keep them fresh? ›

Bakery or homemade cookies can be stored at room temperature two to three weeks or two months in the refrigerator. Cookies retain their quality when stored in the freezer for eight to 12 months.

Does freezing cookies make them last longer? ›

Wait for the cookies to cool completely, then transfer them to a reusable freezer-safe bag or container lined with wax or parchment paper. I like to place them in a single layer to avoid any cookies breaking. Cookies will keep well for up to 2 months. Once ready to eat, simply thaw out at room temperature and enjoy.

Does freezing cookies keep them soft? ›

If you want or need to keep your cookies fresh for more than a few days, put them in the freezer. While this doesn't seem logical, it works because the cookies will freeze more quickly than the starch in them will crystallize, thereby keeping them fresh.

How do you keep Christmas cookies from spreading? ›

1) Don't grease your baking pan — line it instead

“For the best results, choose a silicone baking mat or parchment paper to line your pan,” Dawn recommends. “Simply greasing your pan — basically adding fat to it — will encourage your cookies to spread.” (Check out our side-by-side test baking to see for yourself.)

How do you fix spreading cookies? ›

If this happens, put the dough into the refrigerator until it is well chilled, usually about 1 to 2 hours. Another possible fix is to add some additional flour, 1 tablespoon at a time, until the dough is slightly stiffer and doesn't spread.

Why are my cookies spreading out? ›

Mixing Butter & Sugar

If it's over-mixed, the air pockets decrease in size and are unable to hold their shape in the oven—causing your cookies to spread. It's best to cream butter and sugar on medium speed for 2 to 3 minutes.
